Mushroom Stew
This stew tastes meaty although it really is not. A nice hearty vegetarian option for the winter months.

Ingredients
1 onion cut in thin wedges
2 cloves garlic minced
4 medium potatoes, scrubbed and cut in cubes
1 lb of assorted mushrooms, cleaned and sliced
2 cups of tomato sauce or vegetable juice
1 small can of diced tomatoes
2 tbsps balsamic vinegar
2 cups veggie broth
Directions
All of the ingredients can be put in a slow cooker and be cooked for 4 to 6 hours till the potatoes are done. For a thicker stew, stir in a mixture of 2 tbsps flour and half a cup of water. Let cook for another 20 mins till thickened. Serve with crusty bread and grated parmesan cheese.

Serves 8 hungry vegetarians
