Vegan Mac n' Cheese
Who said mac n' cheese can't be vegan? This is a delicious, nutritious, dish even a dairy-eater can appreciate. Nutritional yeast gives it that cheesy flavour, while cashews add to its protein content. Give it a try... you'll love it!
Ingredients
1 medium onion
2 tablspoons oil
2 cups(dry) macaroni, cooked al dente

1 1/3 cups water
1 cup raw cashews
1/2 teaspoon salt
1/2 cup canola oil
1/3-1/2 cup lemon juice
1 teaspoon onion powder
1 teaspoon garlic powder
3 tablespoons nutritional yeast

1 cup bread crumbs
Directions
Saute onion in oil until transluscent, then stir into cooked macaroni. Set aside.
In a blender, process the water, cashews and salt until smooth. Slowly drizzle in oil, while continuing to blend. Add lemon juice, onion powder, garlic powder and nutritional yeast, and blend until smooth.
Stir into macaroni and onions, and spoon into baking dish.
Top with bread crumbs and bake at 350 deg. for 45 minutes.
