Curried Parsnips
Here is a great way to cook up your Parsnips for a super savoury side dish.
Ingredients
Parsnips
butter
1/4 cup white wine
50 mL Maple syrup
curry powder
fresh herbs (to serve)
Directions
Slice parsnips into 1 inch rounds. Coat with olive oil or peanut oil and roast in the oven for about 30 minutes at 375 F until they are tender.

Just before coming out of the oven, melt a knob of butter in a heavy pot; add a 1/4 cup of white wine, cook down until syrupy, then add about 50 ml of maple syrup. Stir in a couple of large pinches of a good curry powder.

When it's bubbling, add the parsnips. Toss well, simmer for a minute until nicely glazed, then serve with a sprinkle of chopped fresh herbs. The herbs are mostly for colour -- I used tarragon, and its mild sweet anise flavour went well with the parsnips.
