Brussel Sprout Soup
Ingredients
1 lb brussel sprouts
lb finely chopped onion
butter or oil for sauteeing
1 litre soup stock
1 tbsp white wine vinegar
salt, cayenne pepper
chicken or tofu chunks
2 tbsp soya sauce
2 tbsp dry sherry
sour cream (optional)
Directions
Sautee the onion in butter or oil until soft and translucent. Add the brussel sprouts and the soup stock. Cook for 15 minutes. Shortly before the cooking is complete, add salt, cayenne pepper and white wine vinegar. Puree the brussel sprouts in a food processor together with a small quantity of the cooking liquid until you have a smooth paste.

Marinate the chicken or tofu in the soya/sherry mixture for a few hours at room temperature. Saute the chicken or tofu until cooked thoroughly. Mix the Brussel sprouts puree with the remaining cooking liquid, add the marinated chicken or tofu and let simmer another 5 minutes. Serve together with sour cream, to be added to the soup plates as desired.
