Greek Goddess Dressing
This is a lovely herby salad dressing that is fast to make and different from the everyday. Inspired by a recipe from Mollie Katzen's "Still Life with Menu". It is good on a salad of just greens where it can shine on its own. Also good as a dip with fresh veggies or as a spread on sandwiches.
1/2 cup packed fresh parsley leaves
1/4 tsp dry dill (or 1/4 cup fresh dill leaves)
1 tbsp dry basil leaves (or 1/2 cup packed fresh basil leaves)
2 green onions, white and green portions, chopped
1/3 cup oil
1 tsp balsamic vinegar
2 tbsps lemon juice (fresh squeezed is best)
1/4 cup plain, Balkan style yogurt
1/4 tsp herbamare salt (or just plain salt)
generous grindings of fresh black pepper
Place all ingredients in a blender or food processor. Blend until liquified.

Makes about a cup of dressing, enough for 6 to 8 servings of salad. Will keep for about a week in the fridge if you aren't using it all up at once.
